Trước tiên là sơ chế mực: Mực ống làm sạch, rửa dưới vòi nước mạnh. Cắt phần thân thành khoanh tròn vừa ăn. Phần râu mực cắt khúc ngắn vừa ăn, để ráo. Trộn hỗn hợp gồm bột mì, bột chiên xù, bột chiên giòn với nhau, nêm thêm muối, tiêu, trộn đều. Tiếp đến cho mực vào đảo đều để bột áo đều quanh mực.
Cho dầu vào nồi, đợi dầu sôi cho mực đã áo bột vào trở đều cho mực chín vàng đều. Một bí quyết để mực chiên xù giòn tan lớp vỏ áo đó là chiên trong dầu sôi hoặc chiên 2 lần (lần đầu chiên sơ cho mực chín, sau đó chiên thêm lần nữa cho mực giòn).
Mực chiên xù chín vớt ra thấm ráo dầu. Chuẩn bị chén tương ớt làm sốt chấm. Nếu cho các bé ăn thì bạn dùng sốt mayonaise nhé!
